Steak Bites with Smashed Potatoes
This recipe is less specific but still very tasty and easy to do.
Ingredients:
sirloin steak-2lbs. (or however much your family will eat)
6-7 Yukon gold potatoes
1 ½ sticks SALTED butter
dried thyme-1/2 tsp
olive oil
garlic powder
onion powder
cayenne powder
crushed red pepper flakes-optional
Directions:
Heat the oven to 350. Wash the potatoes and pierce all over with a knife then rub with olive oil. Put on a cookie sheet and bake for 45-60 minutes until very tender.
While the potatoes are cooking, melt 1 stick of butter in a small saucepan and add however much crushed red pepper flakes you like. Cook the butter on medium low till golden spots start to appear then add the dried sage.
Keep swirling the pan off and on, allowing the butter to cook. Be patient. Keep this up till the butter under the foam has turned a nice light brown. Remove from the heat and allow to cool.
Prep your steak. Cut it up into fork size bites, removing any gristle or hard fat. Now wait for the potatoes…
Once your potatoes are tender, oil the bottom of a flat glass or small plate and smoosh the potatoes. Don’t destroy the spuds, just ‘pop’ them, exposing the inside meat. Then spoon the brown butter over each potato, really paying attention to the cracks. Salt and pepper them then back in the oven for 15-20 minutes.
Heat a large skillet over medium-high heat. Once it’s HOT, add 1 tablespoon of olive oil and half a tablespoon of butter, swirling it all around the skillet. Get your onion powder, garlic powder, cayenne, salt, and pepper ready because this part moves quickly.
Scatter the steak pieces around the hot pan and sprinkle all over with the spices. Sear till juices start to seep through the pieces, then flip and finish cooking. Remove from heat and keep warm. This will probably take a few batches to cook all of the steak.
Once all cooked, plate up with the potatoes, add some salad from your favorite store brand and enjoy!
