Yes, this is an Olive Garden copycat. No, it’s not exactly like there’s because I’ve tweaked it to how we like it. Yes, it’s still delicious and perfect for cold nights.

This was the first soup I ever say my husband eat. I immediately started scouring the Internet for a copycat recipe that sounded the closest.(Thank you Lourdes Flores!) I found this one and have tweaked over the years. Now the whole family loves it. Check out the story on my Instagram page for making it!

Well, if I’m being honest the whole family loves different parts of it. Mom and Dad will eat the whole bowl; the oldest and youngest will eat the potatoes, sausage, and broth; and the second will eat the kale, sausage,and broth. Throw in some bread sticks and this is a great meal. Its only downside is that leftovers aren’t the same consistency. The potatoes and sausage tend to break down make it more “soup” and less chunky bites in broth.
