Poor Man's Toffee

It’s that time of year when holiday treats are a necessity not just something fun to make. There’s parties, dinners, presents, and potlucks for the next month and half. You need this in your arsenal. This is what you make when you forgot about that next event, you want something easy, or you want something cheap after that third Secret Santa exchange. Or worse, you forgot to get your neighbor a gift.

This is also called Crack. And after your first bite, you’ll understand why. Enjoy!

Couple of notes:

  1. Make sure your cookie sheet has edges. You don’t want the crackers sliding off the edge or the caramel sauce bubbling off of it.

  2. If you don’t have a large cookie sheet, then you can use two. You’ll just have to move a little more quickly.

Poor Man’s Toffee

Easy. Cheap. Tasty. Yes, please.

Poor Man’s Toffee

Ingredients:

2 sleeves of Saltines crackers

2 sticks of salted butter (16 tablespoons)

1 1/8 cup brown sugar

1 bag of chocolate chips

½ cup pecan or almond pieces

 

1.        Heat oven to 350⁰. 

2.       Line cookie sheet with foil and spray with cooking spray (NOT baking spray.  You don’t want the flour).  Line the crackers on the pan in a single layer. If one edge of the crackers overlaps a little on the end, it’s okay.  It won’t ruin anything. 

3.        Bring the butter and sugar to a gentle boil and stir till smooth. 

4.       Pour evenly over the crackers and spread gently to help make it even. 

5.       Bake in the oven for 8 minutes.  It’ll be super bubbly.

6.       Immediately, but gently, pour the chocolate chips on top of the bubbles.  Try to make it even and cover with foil.  The residual trapped heat from the caramel will melt the chocolate in about 5 minutes.  Then gently spread it evenly. 

7.       Allow to set till the chocolate is hard, typically overnight.  Lift the whole thing out of the pan and gently peel off the foil and break into pieces.  You can follow the natural fault between the crackers or break into smaller pieces.

8.       Store any leftover pieces in an airtight container and enjoy!
